Talking about Tea Cake Recipe w/o prunes 

OK , friends, I have to say, Leave out the prunes!  Better eaten without baking, tough chewing….tea cake still good though….Tongue out 
2-1/2 C.Self-Rising Flour
1C. Sugar
3/4 C. Olive Oil or choice
2 Eggs (beaten)
2 tsp. Vanilla
Mix oil and sugar well, add beaten eggs and vanilla
Add flour, gradually, stir well.
Bake 350  about 15 minutes
If you add dried fruit, sweetened coconut ,cut the sugar down to 3/4 C.
The batch I made yesterday was a tad too sweet with 3/4 C.Sugar
This will be thick and you can shape with your hand and spoon.
Rum flavoring is good with the vanilla or your choice.
Yield: about 2 dozen………….Enjoy        copied 1/16/15
